A natural dry red wine made from Saperavi grapes grown in the Kakheti region. The wine is made by traditional Georgian technology by fermentation and aging in Qvevri. It has a soft, velvety aroma with a predominance of shades of prunes, ripe berries, and spices such as cloves and black pepper. Light tannins, pleasant aftertaste.
Do Re Mi was founded by three friends: George, Mamuka, and Gabriel. Their goal in creating the winery was to produce the best natural wines using ancient Georgian technologies. Marani (winery) is located near Tbilisi, and here they produce natural wines from hand-picked grapes in two regions: Kartli and Kakheti. Their vineyards are grown organically and in accordance with local traditions, without industrial yeast, chemicals or additives in the vineyards or in the wine-making process. Do Re Mi wines are produced in Qvevri, these are large hand-made clay vessels that are used for fermentation and aging of wine. The volume of Qvevri is from 1500 to 2500 liters. Slightly squeezed juice is fermented with the skin, with wild yeast and without any additives. After the end of fermentation, the Qvevri is sealed and hermetically covered with clay, leaving it in this form until spring. During the process, the solids slowly sink to the bottom of the qvevri, and the clear wine rises to the top. When the temperature drops in December and January, the live yeast dies, the wine is transferred to a new Qvevri and kept for several months. In spring, dry Georgian wines are drunk during major holidays, and the leftovers are bottled.
